I presume ‘skinny fries’ refers to the thinness of the fries, rather than some low-fat option I
never came across in a Mcdonalds. These monsters are just watery potato-based mulch that have to be
fried quickly from frozen, otherwise they would just disintegrate into the sludge they once were.
And they generally taste like burnt and over-used cooking oil. ‘Steak’ fries are marginally
better, but the finest fried potato option known to man is the British chip, optimally 65–70mm in
length, breadth and depth 8–10mm. A number of potato varieties are suitable, but not all. It
should be fried in clean beef dripping at approx 170 degrees Celsius for seven or eight minutes,
checking all the time. Some say they benefit from an initial parboil, others suggest a double-fry
option, but neither of these steps is a necessity in my view. And they shouldn’t be called French
fries, because only the French think they came from there. The Belgians have a strong claim, but I
feel there’s something indefinably Spanish about them. Fast-food fries generally are the work of
Satan. |

The fatter the potato piece the less of the total surface area crisped by the oil, which means the
healthier the fry and the more natural potato taste you are going to get. With skinny fries what
you're tasting is much more the fried oil than the fried potato. |

What you like are called "shoe string fries" because they're as thick as shoe strings.
If you like 'em, fine. I don't.
1. Shoe string fries go cold too fast. I like to take my time with a plate - a little ketchup, a
little steak sauce, a little pepper, and a lot of vinegar. Plus I always have two pieces of bread
to make a "chip buttee" (french fry sandwich) as the British call it.
2. Shoe string fries have more surface area to suck up grease. Steak fries and wedges are less
fatty after deep frying. |
